I pulled into Yama Seafood in Jersey City at 5am, just in time to glimpse a forklift loaded with a massive whole tuna emerging from the fog. The 40-year-old family business prides itself on supplying top-quality fish to many Michelin-starred restaurants, but the warehouse is a world away from white-tablecloth dining. I photographed the story for Savour, and later returned with a friend to shoot footage for a personal short film.
